      Cheesecake Challenge Entry #3: The Rhonda Gelée Tart

      For my third—and most heartfelt—entry into the #CheesecakeChallenge, I’m presenting something a little different: The Rhonda Gelée Tart, a no-bake cheesecake that brings together classic technique, clean finishes, and a few unexpected twists that make it truly my own.

      A Cheesecake with a Twist

      At first glance, this tart looks like a delicate berry-topped dream—but inside, it’s quietly daring. Both the base and the creamy layer feature an addition of grated semi-hard goat’s cheese, which adds depth, a gentle tang, and an elegant savoury balance that offsets the sweetness. It’s subtle but purposeful, enriching the overall flavour profile without overwhelming it.

      Layers That Tell a Story

      This cheesecake is all about technical precision and textural harmony:

      The Clear Gelée Topping

      Fresh blueberries, sliced strawberries, raspberries and blackberries, homegrown mint and edible flowers are suspended in a perfectly transparent, slightly lemon-kissed gelatine layer. The clarity of the gel and the placement of the fruit were deliberate, ensuring a polished, competition-worthy finish.

      Sharp Raspberry Gel Layer

      Beneath the fruit sits a raspberry gel that brings a refreshing brightness. It cuts through the creaminess with just the right amount of sharpness while adding striking visual contrast in the final cut.

      Creamy Cheesecake Layer

      Not overly sweet, with a soft strawberry note carried through every bite. The goat’s cheese adds complexity without distracting from the classic cheesecake identity. The texture is smooth, clean, and holds a flawless slice—as the challenge requires.

      Soft but Structured Biscuit Base

      The biscuit layer is tender yet stable, incorporating goat’s cheese to tie the flavour journey from the very bottom to the very top.

      Why My Cheesecake Deserves to Win

      This tart was truly a labour of love—from the balancing of flavours to the precision of each layer. I’m proudest of the texture and the clean cut, which reveal every tier in perfect proportion. It captures technique, creativity, and intentionality.

      And if I’m honest… this may be my last cheesecake for a while. After three entries, multiple attempts, and a whole lot of tasting, I think I’ve officially over-indulged. But I wouldn’t change a thing—this one feels like the perfect finale.
