• Is tortellini with fish any good?

      #foldingchallenge

Hello guys, this is the first dish i prepared after a month of inactivity, due to my fiancee undergoing routine surgery. Happy to be back here.

I consider this dish to be the final evolution of the medaglioni i already posted twice (see comments). I’m happy with the result: the plating looks ok and i’d love to know which one you prefer among the three options, the tortellini are more scenographic than the medaglioni and the taste was phenomenal. Here’s what i had for dinner:

Rheubarb scented tortellini filled with sea bass and roasted veggies, sea bass consomme with turmeric and smoked paprika, blue crab bisque, sea bass lemon tartare and parsley (!) oil.

These tortellini had it all and the recipe goes straight into my archive.

      Peace ✌🏼

So glad to see you back in action, dear Fabrizio! 🙌🏼 The tortellini are beautifully shaped and the dish shows a refined balance of color and structure.

What’s one folding or filling technique you’ve learned in this evolution that you’d like to master even more?

          • @soldamiani I’m used to fresh pasta. One thing I could say? Use water CAREFULLY 😆😆😆

@fabrizio-vindigni Hahaha Fabrizio, your “use water CAREFULLY” deserves a spot framed in every pasta lover’s kitchen wall 😂💧

It’s so true how that tiny detail can make or break the sealing! Since you’re already skilled with fresh pasta, what’s your #1 trick for getting that perfect tortellini texture every time?
Can’t wait to see your next plate—it always feels like we’re stepping into your kitchen.

Fabrizio, you’re back with a masterpiece! These tortellini look absolutely stunning. I love how you took the medaglioni idea and pushed it even further, this really feels like your ‘final evolution’. Happy you’re back, and sending good vibes to your fiancée too. Beautiful work, as always. ♥️
