      Feta Cheese Spirals

      For this challenge, I decided to celebrate a true Balkan classic: small savory spirals made with phyllo dough and feta cheese. They remind me of cozy breakfasts shared with family, always served with a glass of cold yogurt.

      I used phyllo pastry, the traditional thin and elastic dough that turns beautifully crisp when baked. Its delicate layers gently cradle the cheese filling and create that signature flaky texture.

      Inside is a creamy and savory blend of feta cheese, eggs, yogurt, sparkling water and a hint of salt. The mixture is enriched with oil for smoothness and a touch of baking powder for lightness, creating a perfect balance between saltiness and softness. Each strip of dough was rolled and coiled into a spiral, keeping the filling secure while giving the pastries their distinctive look.

      Before baking, I brushed the spirals with olive oil and sprinkled them with white and black sesame seeds for extra aroma and crunch. They were baked until perfectly golden.

      Served warm with a glass of yogurt, the ideal pairing that transforms something humble into a small, everyday pleasure.
