      Pambazos – A Bite of Mexican Street Soul

      This is another recipe I wanted to try from Chef Paloma Ortiz’s course Mexican Street Food, and it truly captures the essence of Mexican street culture. There’s something magnetic about Mexican street food. It’s not just about flavor, but about rhythm, color, and the heartbeat of everyday life. Pambazos capture all of that in a single bite.

      Pambazos are more than just sandwiches, they’re a whole experience. The bread is dipped in a guajillo chili marinade until it becomes intensely red and aromatic, then lightly fried to create that perfect balance between crisp and tender. Inside, the classic filling of potatoes and chorizo brings warmth, spice, and a sense of comfort that’s hard to describe until you taste it.

      Finding the right chorizo was probably the biggest challenge, but once I did, everything came together perfectly… the flavor, the color, the aroma. I finished the Pambazo with fresh salad and crema, adding a cool and light contrast to the richness of the bread and filling.

      The result was bold, rustic, and unapologetically flavorful. Just as street food should be.

        Si montaras un restaurante yo seria cliente habitual ! Dios mio Lana, esos Pambazos se ven super apetecibles. Una duda que tengo, pican mucho? En casa no podemos tomar mucho picante y tengo que controlar esto

        Pero… ¿qué maravilla es esta, Lana? 😍 Los pambazos son puro corazón callejero, y lo describes con tanta pasión que casi puedo oler el guajillo desde aquí. Ahora mismo cierro los ojos y estoy en las calles, bulliciosas y coloridas, de México DF.
        Has logrado transmitir la energía de la calle en DF. 🌶️🇲🇽

          @beatriztorijagmail-com Thank you sis. ♥️ You should try this recipe. I couldn’t quite imagine what to expect, but I was blown away. The neighbors also tried. And I had some sauce left, so I put it in a jar and will use it soon in some Mexican-Serbian fusion. ☺️

              @soldamiani Thank you sweetie! For me, it’s curiosity. Every Mexican street dish feels like an adventure… full of color, spice, and unexpected layers of flavor. It’s that moment when you think you know what to expect… and then it surprises you in the best possible way.
