	Fabrizio Vindigni posted an update 2 weeks ago (edited) Second attempt: Medaglioni with an oriental inspired croaker stuffing (soy and turmeric), croaker lime tartare on top, a dense broth made with veggies, clams and the croaker trimmings. The second attempt, to me, usually tells me what goes better and opens the road to the final form of the plate, with the third attempt. What does this second attempt tell me? Ravioli are smaller, i love it. We need a cup-like plate to showoff the golden sauce. The tartare doesnt work like this, i need to prepare a full wide small disc to place over the ravioli like a cap. 	Level:Stagier I love seeing how your dishes evolve. Every version gets closer to something amazing! These smaller ravioli already look perfect, and that sauce is pure gold 😍 I can totally picture how that crispy fish skin will finish it off just right. Can’t wait to see your next attempt. - 
	@lanamihajlovic heh, thank you so much. I wish my delivery would be always on par with the expectations, but this second attempt is below par to me. I will try to step up the game with the third, I have good ideas. The whole process, tho, make me aware of tips and tricks in printing ravioli like a machine, and this is good tho 1

	Level:Scoolinary Team So exciting to see your second take, Fabrizio!! ✨ The composition is much tighter now, and those smaller medaglioni look more refined and inviting. The sauce’s color really pops here, and the switch to dark plates helps bring out the contrast. 
 What’s the one visual element you always adjust first when refining a dish like this?

	@soldamiani actually I think that these 3 versions are really, really poor. This is a step that should bring me to a decent version as I wrote in the post. Probably kn Saturday I will try to make the third step, we will see. I will answer to the question with the third attempt tho -
