Spinach and Cheese Pie
Spinach and cheese pie carries that old-fashioned certainty within itself. It knows it doesn’t have to try hard to be loved. When you place it on the table, the whole house already knows what’s coming. The smell drifts through the hallway, the yogurt is already cooling in a glass, and everything suddenly makes the kind of simple sense that life once had and we somehow forgot. A bite of pie, a sip of yogurt.
There are no great secrets or grand words here. Just the smell that fills the room, the sound of a knife cutting through the warm crust, and that moment when the cheese stretches just enough. It’s the kind of moment that makes everyone fall silent.
Because every pie, no matter how simple, carries something of a mother’s hand, of a warm plate on the table, of something that doesn’t change, even when everything else does.

These kinds of pies are some of my favorite meals too—I love pairing them with a simple salad of raw tomato and onion, dressed with really good olive oil. It’s such an honest, grounding combination.
