I made the brioche dough as taught in the video course, including the Key lime Cheesecake filling for the inside of the roll. I was inspired from the cinnamon roll David Cowcill‘s course. I made a keylime cream cheese icing. This is exquisite!

Wow, Elizabeth, what a dreamy take on a cinnamon roll! 💫 That Key lime cream cheese icing gives it a tropical twist that’s both indulgent and refreshing. The dough looks soft and well-proofed, and the swirl is nicely defined—great execution from start to finish!
I can totally picture the final version garnished with a touch of lime zest, some white chocolate curls or even a tiny candied lime peel on top for extra flair.
Now imagine this beauty served in a cozy café, on a small ceramic plate, paired with a perfectly pulled flat white—creamy, smooth, and just strong enough to balance the sweetness of the roll. ☕✨
Honestly… this could be the star pastry on any brunch menu. Are you thinking of experimenting with other fillings next?1-
@soldamiani i plan on experimenting with fillings and garnishes. Thank you for your feedback that would be beautiful especially at a beach barista cafe.

@elizabeth-bellinger A beach barista café?! Yes please—I’d queue up barefoot for one of your rolls 😍 That citrusy twist already feels like sunshine in pastry form.
