Sunday Lunch for 2
Well, yesterday i found a good deal on croacker and clams, at my local supermarket. Today i used them to prepare some nice medaglioni (similar to ravioli) from scratch. Here we go:
Medaglioni with an oriental inspired croaker stuffing (soy and turmeric), croaker lime tartare on top, a dense broth made with veggies, clams and the croaker trimmings, capers.
It was really good, mineral and savoury, but i think i will not use capers again on this dish.

@loles-mhotmail-com muchas gracias chef! They tasted real good and I loved the stuffing but definitely no capers next time. With some more time I’ll manage to swap them with the fried fish skin

@lanamihajlovic thank you so much for your kind words. Yes well, they add saltiness but actually… A little too much. I’m not a fan of this plating tho, I have an idea. As soon as I get the ingredients again I will show you 😬
