      Today I was experimenting with chocolate! 🍫 I am quite pleased with the end result, though a few white shells broke from the mould. The white bonbons are filled with vanilla ganache and coated in coconut shavings. The dark and milk bonbons are filled with pomegranate ganache and coated in sugared cocoa powder. Unfortunately, I wasn’t in time for the chocolate challenge – maybe next time! 😊

        Your photo is lovely: clean background, sharp focus, good lighting—and the bonbons look super tempting! The coconut texture and cocoa coating are clear and appealing. For next time, you might try a lighter or reflective base to enhance the chocolate’s shine even more.
        About the white shells breaking—totally normal at first! Did you manage the tempering and cooling time properly before unmolding? Often, tiny cracks come from temperature shifts or rushing the process.
        Even though you missed the chocolate challenge, working with this magnificent ingredient is always a win. There’s always a next time!

        • @soldamiani I believe I did leave enough cooling time, as only a few of the white ones broke – they are clearly much more delicate to work with! Will need to practice some more 😊

            @denisemangion Totally get you! The white ones are trickier — more delicate and a bit temperamental 😅 But that’s exactly where the learning happens. Every attempt counts, and those tiny cracks are just stepping stones. You know what they say… practice makes the master! 💪
