      Some desserts remind us that the deepest pleasure lies in simplicity. Truffles are exactly that… a quiet luxury, where just a few ingredients transform into something that warms both the soul and the palate.

      Ganache is the heart of these little spheres: cream and chocolate merging into a smooth, glossy mass. Once rested and set, it is shaped by hand. Finally, cocoa powder cloaks them in a veil of bitterness that highlights their inner softness. As in life, contrast is what brings us back to essence.

      Ingredients: dark chocolate 70%, heavy cream, vanilla extract, unsalted butter, salt, cocoa powder for coating

      Applied Techniques

      Infusion & heating of cream – cream is gently heated until simmering to activate its binding properties.

      Emulsification – pouring hot cream over chocolate (with butter) and letting it sit before stirring ensures a smooth, glossy ganache.

      Flavor incorporation – adding vanilla extract at the right temperature to preserve its aroma.

      Protective covering – placing plastic wrap directly on the surface prevents condensation and the formation of a skin.

      Controlled chilling – refrigerating the ganache in a shallow dish allows for even cooling and proper setting.

      Final coating – rolling the truffles in cocoa powder adds the finishing aromatic and textural note.
