      Turkey Chili

      I used the leftover sauce from the long slow braise of the beef chile colorado dish last week. I sautéed onion, garlic, fire roasted tomatoes, and the meat and added corn, mini sweet peppers, and pinto beans.

        I love how you repurposed the chile colorado sauce. The fire-roasted tomatoes bring that smokiness, the corn and mini sweet peppers add brightness and crunch, and the pinto beans tie it all together with heartiness. The radish slices and fresh herbs on top give it that fresh lift and make it pop visually. It’s the perfect example of how leftovers can be transformed into a whole new, vibrant dish.
