      Beef Chile Colorado has a rich depth of flavor from chile peppers and a long low and slow braise. Garlic Rice with Dark Red Kidney Beans on the side.

      Chile Colorado is a traditional Mexican beef or pork stew from the Chihuahua region of northern Mexico, named for its deep red sauce made from blended dried red chiles. The Spanish word “colorado” means “colored red,” which is the dish’s namesake, not the U.S. state of Colorado. The dish involves slow-simmering meat in a flavorful sauce of rehydrated and ground dried chiles. I used ancho, guajillo, pasilla, and arbol along with onion, garlic, cumin, oregano, pepper, fire roasted tomatoes and beef stock. I dry-brined the meat for 30 hours prior to cooking. This was a flavor-bomb.

      There are no beans in this chile, so I put them in the rice.
