      Iberian pork tenderloin

This sirloin is cured at home.

I bought it fresh, put it in a container covered with coarse salt for 24 hours in the refrigerator.

Then I washed it and removed the salt and dried it perfectly.

I macerated it with the spices that I like the most, smoked paprika, black pepper, oregano and thyme, I put a gauze well wrapped and put it in a cool and dry place.

You can put it in the refrigerator and turn it every day for 20 days.

When this process is finished, take it out, remove the excess spices and it is ready to eat.

If you leave it less time, it is also good, but more raw.

I put photo of more cured and more raw

          • This is such a beautiful example of hands-on charcuterie—simple, intentional, and full of flavor. The way you’ve cured the Iberian pork tenderloin shows real care and understanding of the process. That initial salt cure sets the foundation, and your spice blend—smoked paprika, black pepper, oregano, thyme—adds warmth and depth that must infuse every bite.
Wrapping it in gauze and letting it rest for 20 days is a patient, artisanal touch. I love that you’ve shared both the more cured and the more raw versions—it’s a great way to show how texture and flavor evolve over time. The rawer version probably has a silkier mouthfeel, while the longer-cured one brings out that concentrated umami.

Homemade curing really brings out such unique flavors, and I love the spice mix you chose. A true delicacy, and even more special because it’s homemade! 👏
