Kinjo is a new Itameshi Wafu Italian concept from Chefs Eric & Adriana Fralick. They describe the restaurant as Italian food made with Japanese sensibilities. Itameshi is the term for the entire fusion cuisine that blends Italian and Japanese food, while wafu is a Japanese term that means “Japanese style” and can refer to specific dishes or the cultural elements and ingredients used within itameshi.
