Azerbaijani dolma with spinach oil and cucumbers in sour cream.

Azerbaijani dolma differ from Greek ones in that they are made up in squares and served warm.

I wish I’d been able to blend the oil, but I moved to a new country last week and have limited things in my kitchen.

How interesting, Sarah! I love that you shared this Azerbaijani-style dolma, it looks delicious and quite different from what we usually see. I was really intrigued by what you mentioned about them being served hot and in a square shape in Azerbaijan do they have any typical fillings that make them unique? Thanks for joining the #GreenChallenge and for taking part even with your limited kitchen setup after the move. 🙌✨

        • It’s just 200g mince, 25g rice, a spring onion, and your favourite herbs. It’s usually just served with yogurt or as part of a big spread, but my next mental challenge is how to turn dolma into fine dining!

This looks wonderful, especially considering you’ve just moved and are working with a limited kitchen setup! 👏 I love how you highlighted the difference between Azerbaijani and Greek dolma… the square shape and serving them warm really make them stand out. The spinach oil and fresh sour cream with cucumbers add such a bright, refreshing touch. A beautiful entry for the #GreenChallenge, full of authenticity and heart.✨

            Hi Scoolinar! 💚
Thank you for sharing such a thoughtful entry. There’s something very honest and grounded in this plate. The Azerbaijani dolma wrapped in squares is such a beautiful cultural detail, and that warm presentation with spinach oil and creamy cucumber brings balance and comfort.
We love seeing how you adapt and keep creating—even with limited tools. That’s the true spirit of the kitchen! If you had your blender, what kind of texture or contrast would you have aimed for with the oil?

I also hope that settling into your new country turns out to be a smooth and joyful experience🙌
