What an elegant and beautifully presented dish, Kevin! I love the contrast of colors with the pomegranate and the freshness the asparagus brings. The herb and pistachio crust looks spectacular I’m sure it adds an amazing texture and flavor to the lamb. How did you achieve such a perfect doneness on the meat? 👏✨

@sussan_scoolinaryteam Thank you, Sussan! I seared the tenderloin in a cast iron skillet, and then baked it in the oven, and kept checking it with an instant read thermometer.
