Zucchini Season is ON! 🥒💚 #GreenChallenge
If you have a garden, you probably know the two extremes:

      – no harvest at all, or

      – everything ripening at the same time.

Right now, our garden is overflowing with zucchini and cucumber.
It’s always a challenge to come up with new dishes, but yesterday we nailed a great one:

We sliced fresh zucchini, sprinkled with salt and cheese, baked them for a few minutes… and voilĂ  – crispy zucchini rings! 🥳

For the dip, I gave classic mayonnaise a twist:
I roasted the zucchini cores (left from cutting the rings), then blended them into the mayo with a splash of white wine and lemon juice.

Simple, creative, and absolutely delicious – the perfect summer dinner! 🌿🍋

What a well-executed dish! The plating is clean, balanced, and visually appealing. I love how the creamy dip, with its pop of color, breaks up the round shape of the zucchini rings. And using the zucchini cores for the mayo? Such a clever and delicious twist.

Have you tried using this dip base with other roasted veggies? You might discover some equally surprising combos 🤔✨

What a beautiful and grounded way to start your post — that reflection about gardens and extremes is so relatable. It’s true: nature rarely gives us balance, so we learn to get creative in the overflow. And wow, you really did, Orsi!

The photo is striking: rustic, real and inviting. The crispness of those zucchini rings is almost audible through the screen, and the plating has this relaxed elegance that fits perfectly with a seasonal, home-grown story. The roasted core mayo dip is such a clever no-waste touch — smart and delicious. That little hand in frame adds warmth too.
