      #GreenChallenge Cold cucumber soup for lunch on a hot summer day. The soup ingredients include scallion, garlic, rice vinegar, crème fraîche, Greek yogurt, extra virgin olive oil, salt, white pepper, and fresh dill. Garnishes include wasabi pearls, radish, cucumber, dill, herb oil, microgreens.

      Many recipes for pureed soups just have you making the puree and serving it. I always make sure to have extra of the main ingredient to dice and include for more interesting textures and mouthfeel. I do the same with gazpacho.

      After rough chopping, adding a few ice cubes and blending, I put the blender and the bowls in the freezer while I prepared the garnishes. I gave it a short re-blend before serving.

            Is this your first time joining a challenge, Chef Kev? 😊 Such a pleasure to see you diving in after posting so frequently and always with such thoughtful creations. I’m honestly so happy you jumped in!
            This photo captures calm freshness in every detail — the color grading is smooth and soft, almost like a watercolor in green. The plating feels intentional and clean, and those pops of radish, pearls and microgreens break the surface beautifully. Just a tiny tip: a close-up crop could help us appreciate the texture work even more!

            The chilled cucumber base already promises refreshment, but all those thoughtful textures from the diced veggies, wasabi pearls, and microgreens turn it into something you actually want to linger over instead of just gulping down. I like how you’ve treated it almost like plating a composed salad in soup form… each garnish adding a little pop of color, crunch, or spice.
