      #GreenChallenge Today’s lunch. Dal Palak – Lentil Curry with Spinach – cumin powder, kashmiri chili powder, amchoor powder, turmeric, cumin seeds, brown mustard seeds, kashmiri chilies, and garlic ginger paste.

      The red lentils were simmered with turmeric powder and salt. There was a tadka of cumin seeds, mustard seeds, and dried chiles. This was added to the lentils along with a spice mix, and finally frozen chopped spinach.

        That Dal Palak looks incredible. The combination of all the components makes me imagine the amazing aroma that must have filled your kitchen.
        I think this dish would be a perfect candidate for the Green Challenge 💚. It’s got the green as the star, plenty of technique, and a visually stunning result. If you’re up for it, you’d just need to edit your post, add the hashtag, and tell us a bit about the culinary techniques you used.
        For example, whether you started with a tempering (tadka) to awaken the aromas of the spices, how you achieved that creamy texture in the lentils, or at what stage you added the spinach to keep that intense green. These are the kinds of details that would surely inspire others in the community to try something new.

            I love that you used frozen chopped spinach. It keeps the vibrant green while making it easier to throw together, and the amchoor powder adds that bright, tangy lift that balances the earthy lentils perfectly.
