Cin Chili by Cindy Reed Wilkins – the only back-to-back winner of the CASI International Chili Championship. She has won numerous awards for her products and was featured on Throwdown with Bobby Flay. The recipe is from the “Seriously Good Chili Cookbook: 177 of the Best Recipes in the World” by Brian Baumgartner, aka Kevin Malone from The Office. I picked this up and got it signed while judging at the 55th Annual World Championship Chili Cook-off in Myrtle Beach in 2022.

Kevin! What an amazing story behind that chili. It not only sounds delicious, but it’s also packed with history, awards, and even a special autograph.
You can tell you enjoyed the experience as a judge at the championship, and what a treat to try and now cook such a highly acclaimed recipe! That dish looks like it’s worth making… and making again.

Wow! 🔥 That chili looks incredible — rich, hearty, and perfectly topped for both flavor and texture. Love the backstory behind the recipe too; cooking a champion’s dish makes it extra special. What was the most challenging part of nailing Cindy’s award-winning flavors?

            • @soldamiani Thank you, Sol! The recipe is not challenging at all. A cool thing about this recipe is that there are three separate spice mixes that you add at different parts of the cook. It has great highly seasoned, layered flavors.

That’s chili with a serious pedigree! 🌶️ I can just imagine the deep, rich flavor, perfectly balanced spices, and that satisfying slow burn that only a true champion chili delivers.
