      Red Berry Tart, from the course ‘Entremets and Tarts’

      The most challenging for me was not to eat the berries while decorating. I mentally slapped my hands. But if seriously, the most challenging thing is organising the time while following the steps of the preparation. This tart is hiding three delicious layers, so it’s worthy to plan ahead once you’d like to have them ready for a certain hour. That’s why among other things, I adore the art of pastry. With some good amount of planning and organization, the result never fails

          You can truly see the care and planning you mentioned in every detail. The shine on the berries is gorgeous and really makes the colors pop, and that contrast between the red sablé crust and the inner layers is so striking.

          If I may offer a tiny suggestion: in the cut, the almond cream and vanilla cream layers look delicious but a little blended together. Maybe chilling the almond cream well before adding the vanilla cream, or letting it set a bit more, could help define those layers better for a cleaner, sharper cut.
          Which of those two creams did you enjoy making more, or do you feel adds the most character to the tart? I’d love to hear your thoughts!
