    Hello! For Yuzu Pound Cake, Travel Cake by Eunyoung Yun – it is recommended to store the finished product at around 18C with a shelf life of 1 week. I’m wondering how can I determine the shelf life for other future ganache and perhaps extend it? Ganache will have a longer shelf life in the fridge but would like to understand it more for storing as a finished product 🙂 Thank you!

    Sure, here’s how you can extend the shelf life of ganache:

    1. Shelf Life of Ganache: It depends on the ingredients but generally lasts 1-2 weeks at room temperature.

    2. Extending Shelf Life:

    -Refrigeration: Up to 2-3 weeks in the refrigerator. Make sure to store it in an airtight container to avoid odor absorption and dehydration.

    -Freezing: Up to 2-3 months in the freezer. Thaw it in the refrigerator before use and mix well, using a double boiler or microwave to restore its texture.

    3. Storage of Finished Products:

    Temperature: If storing finished products (like cakes or tortes with ganache) at room temperature, keep them in a cool, dry place to prevent rapid deterioration. A cool environment (around 18°C) is ideal.

    Packaging: Use airtight containers to protect the product from air and moisture.

    These tips should help you manage the shelf life of ganache and finished products more effectively.
