Sticky toffee pudding ice cream

My husband is British, so we enjoy the English classic, sticky toffee pudding, in the winter months. I decided to turn it into an ice cream, so that we can also enjoy it during the summer.
Vanilla ice cream base, egg-free Philadelphia style
Date sponge cake pieces mixed in
Sticky toffee (date) sauce swirl and topping
This was my first time making an egg-free base and I was impressed by how much less finicky it is than egg custard. I can see why this is a popular technique for commercial manufacturers.

@Sussan Estela Olaya Thank you for the feedback! I was surprised to find that I couldn’t detect a difference between the egg-free and egg based ice-cream in terms of texture. Cream cheese is added to replace some of the missing fat from the eggs. The best part is no chance of overheating and cooking any eggs, so the mixture remains smooth.

@soldamiani Thanks Sol! I was surprised by how much easier it was to make. I’d never tried it before, because I didn’t like the idea of using cornstarch as a thickener, preferring the richness of eggs. However, this style is much easier and resulted in fewer dirty dishes, too! The cornstarch was minimal, so it didn’t turn gloopy and the cream cheese ensured the perfect texture in the final product. This is a good alternative if eggs are more expensive than cream cheese!
