    Hi Keegan!

    If you don’t have access to a vacuum machine, there are still a few ways to minimize the amount of air in a liquid intended for spherification:

    Let it rest in the fridge: A simple method is to let the prepared liquid (before spherifying) rest in the refrigerator for a few hours. This allows any air bubbles to rise to the surface so you can skim them off with a spoon or spatula.

    Use a spatula or whisk gently: Avoid incorporating air while mixing. Stir gently with a spatula instead of whisking vigorously.

    Strain through a fine mesh or sieve: You can also strain the liquid to remove any bubbles or impurities that might affect the spherification process.

    DIY vacuum (optional): While not the same as a professional vacuum machine, some people use airtight jars and manual wine-pump-style vacuum devices to help remove air.

    If you’re working with alginate and calcium lactate, reducing air is key to getting well-formed spheres with a smooth texture.
