Amount of dough Antonio's second course

If I want to double the amount of dough in the mixer, in order to save time, but still I don’t have a sheeter.
Is it okay to cut it into two pieces and roll one piece into 55cm,while the second half is resting.
This might take me about 10 minutes .

Yes, you can divide the dough into two pieces and roll one while the other rests, but there are a few factors to consider:
1. Resting and Fermentation Time
After 10 minutes at room temperature, the fermentation may progress slightly, especially if the dough is in a warm environment. However, it shouldn’t be a major issue if you work in a cool space or refrigerate the second half while you work with the first.
2. Temperature and Handling
The heat from the rolling pin and your hands can soften the butter in the dough. If you notice that the second portion becomes too soft while waiting, you could refrigerate it to prevent it from becoming sticky or over-fermenting.
3. Process Organization
If your space and time allow, you could take small cold breaks between each step to ensure both halves stay in optimal condition.
Tip: If the weather is warm or the dough is very delicate, you could even refrigerate the first half for a few minutes before continuing with the lamination of the second.
