      Crimson Crunch Royale

      Baked red potato patties with cheese, creamy parsley sauce, smoked pork crisps, and black caviar

      Profile: Amateur

      Ingredients: Red Bliss potatoes; Aged semi-hard cheese (kačkavalj); Sour cream; Mayonnaise; Fresh parsley; Smoked shredded pork crisps (duvan čvarci); Black caviar

      Techniques used:

      Grating:
      Potatoes and cheese were coarsely grated to achieve a texture ideal for binding and baking.

      Mélange (gentle folding):
      Grated ingredients were gently folded together by hand to preserve lightness and avoid over-compression.

      Paner-pressing:
      The mixture was lightly pressed into rustic discs without using molds, embracing a natural, handmade look.

      Oven-roasting:
      Discs were roasted in the oven with no added fat, to create a crisp exterior and juicy interior.

      Brunoise:
      Parsley was finely diced into brunoise to evenly release its fresh aroma into the sauce.

      Cold preparation:
      The sauce of sour cream, mayonnaise, and parsley brunoise was prepared cold to preserve delicate raw flavors.

      Layering:
      Final assembly followed a layered approach: roasted potato base, then cold sauce, followed by shredded smoked pork crisps, and topped with a delicate spoonful of black caviar.

      Brief description of the concept behind the dish:

      At the heart of this dish lies a gastronomic tale of clashing worlds… where earth and sea, village and salon, tradition and rebellion meet in a single bite.

      “Crimson Crunch Royale” is not merely a plate of food, it’s a micro-drama of flavor. The foundation of red potatoes, humble and stubborn like the farmer who planted them, is lovingly grated and joined with cheese that melts and releases its soul in the oven. Upon this golden stage rises a cold, silky sauce, a tender embrace of sour cream and mayo, dusted with parsley as if scattered by a breeze from a grandmother’s window waiting for lunch.

      Then comes the twist: duvan čvarci, smoked pork crisps, torn like pages from memory… evoking pantry jars, hearth smoke, and hands salted from seasoning meats. And finally, in quiet defiance of expectation, a dollop of black caviar. Not as a snobbish flourish, but as a counterpoint, the final sentence in a novel you reread just to be sure it truly ended that beautifully.

      This dish was born in the soul of a chef who knows that potatoes don’t have to be plain, that pork crisps can be sophisticated, and that sometimes, caviar just needs the courage to sit beside a peasant legend.

          @undefined Thank you from the bottom of my heart for such a warm and thoughtful comment! It truly means a lot to me that you recognized the effort and emotion behind the dish. For me, cooking is exactly that: telling a story through flavors, aromas, and textures. The inspiration for this dish came from a contrast between my childhood and the present.

          Grated potatoes and smoked pork cracklings take me back to my grandmother’s kitchen, where everything was rustic, warm, and unpretentious, just pure soul on a plate. And the black caviar is a small, perhaps unexpected touch of luxury, symbolizing everything I’ve learned to appreciate later in life… subtlety, complexity, and balance.             @Beatriz Torija Ohhh sis thanks…I really enjoyed this challenge (although every time a new one is published my head explodes, and in the end I don’t have time for everything I want 😁). These challenges somehow make it feel as if we are all together in the same kitchen and cooking. The potato was definitely on the throne these two weeks ❤️
