      Summer has me craving salads. Here’s a delicious carrot salad, made with a combination of roasted and pickled carrots, with a fish sauce dressing, served on a bed of rice noodles. It’s topped with roasted peanuts, mint and fresh coriander leaves.

        I really like your proposal,it’s so fresh and thoughtfully put together.
        Your salad shows a well-achieved balance both visually and technically: the contrast between the roasted and pickled carrots adds depth, and the crunchy touch of the peanuts brings in texture very effectively.

          @Sussan Estela Olaya I saw the technique in a book (Mob One) and thought it seemed very unusual. The contrast of soft and sweet roasted carrots, alongside crunchy and salty-sour carrot ribbons worked very well indeed.
