I made the Palak Paneer from Anjalina Chugani’s “Introduction to Indian Cooking” course. Having grown up with homemade Indian food, I chose to make it the way my mother always has, omitting tomatoes to preserve the full flavor of the spinach, blending the greens to a smooth consistency, and adding the paneer without frying it.
Served with freshly made rotis, it was a simple yet deeply satisfying dish that brought back the comfort of familiar, home cooked meals.

It’s so heartwarming to see how you connect cooking with your family memories! Your adaptation of the Palak Paneer, staying true to the traditional way your mother used to make it, gives the dish a unique emotional value. It’s clear that you put a lot of love into it, and paired with those freshly made rotis, it must have been a truly comforting experience.
The texture of the paneer and the richness of the green color look great in the photo. If you’re looking for a small visual improvement, you could try serving it on a lighter or more neutral plate to make the vibrant curry color pop even more (just a tiny tip,the dish already looks delicious!).
