Croissant tart ring dimensions
Escrito por pedsjoey on junio 25, 2025 en 03:42Hello! What are the dimensions of the rings molds the chef uses for his croissant tarts (pear frangipane and flan)? I know the diameter but I am not sure of the recommended height of the molds.

Hi Joey.
Good morning, the chef in the course suggests using 10 cm diameter ring molds to shape the croissant tart with pear frangipane.
The height of the ring for the tart is approximately 4 centimeters, and the cup he uses to weigh it down along with the beans is about 4.5 to 5 centimeters in diameter, based on the fact that the base dough measures 10 centimeters in diameter.
