      Azerbaijani dolma with spinach oil and cucumbers in sour cream.

      Azerbaijani dolma differ from Greek ones in that they are made up in squares and served warm.

      I wish I’d been able to blend the oil, but I moved to a new country last week and have limited things in my kitchen.

        • It’s just 200g mince, 25g rice, a spring onion, and your favourite herbs. It’s usually just served with yogurt or as part of a big spread, but my next mental challenge is how to turn dolma into fine dining!

          This looks wonderful, especially considering you’ve just moved and are working with a limited kitchen setup! 👏 I love how you highlighted the difference between Azerbaijani and Greek dolma… the square shape and serving them warm really make them stand out.
