Hey Chris! Those Taco Cupcakes look amazing the name is super original, I hadn’t heard it before! Did you call them that because of the shape? I’m curious, I think I’ve seen something similar called “taco baskets,” but your version has way more style.
I love the vibrant colors from the fresh ingredients they really make the dish pop. Could you tell us a bit more about how you made them? I’d love to know what kind of base you used and how you put the filling together.

@Sussan Estela Olaya the “taco” shells are won ton wrappers. You put a wrapper in a muffin tin and spoon in taco meat. Top the meat with shredded cheese and then do another layer of won ton, meat and cheese. Bake them at 375 for 10-12 minutes.
I topped them with sour cream, diced tomatoes, my smoked habanero salsa, sliced green onions and cilantro (my wife adds olives and diced jalapeños tomatoes beers).
