What a wonderful dish, Kevin! Thank you for sharing it with us it looks spectacular. The combination of celery root and lemon crab sounds so fresh and beautifully thought out. I also love how you took care with the presentation; those threads add such a lovely pop of color.
A technical question: did you finish the soup base by emulsifying it with any kind of fat, or just with cream to achieve that velvety texture? It looks incredibly smooth. Thanks again for sharing it with us! 🙌🏻1-
