Chicken Cacciatore with Trottole. Just when I think I know all the pasta shapes I discover a new one. This is actually my second dish with it since I discovered it in May. Trottole means spinning top in Italian, hence the shape of this twirly, thick pasta. Its tightly wound, spiral shape holds the maximum amount of sauce making each bite bursting with flavor.

This Pollo Cacciatore with trottole is both a visual and technical delight: great color, well-integrated ingredients, and a clean presentation that highlights the natural shine of the tomatoes 🍅.
Spiral-shaped pastas like trottole are designed for a specific purpose: to catch and hold the sauce within their curves. That makes them ideal for saucy dishes like this one. Your choice was spot on and on top of that, this type of pasta adds texture and visual movement to the plating.
How did you feel about the balance between the juiciness and texture when you tasted it? Would you consider trying this combo with a creamier sauce or a more reduced poultry stock to experiment with different textures? I’d love to see where else this pasta takes you!
I’m honestly tempted to try and replicate your dish for one of my lunches this week it looks absolutely delicious.🤩1-
@sussan_scoolinaryteam The first time I made this last year, I had a more finely pureed sauce, and this time it was more chunky. Both were good, but I like it with the more liquid sauce. I crushed the tomatoes by hand here. I like it better when pureed with a blender as everything integrates more.

@undefined Thanks for sharing that, Kevin. It’s so interesting to hear that you’ve tried both versions. Honestly, each one has its own charm the rustic texture of hand-crushed tomatoes gives the dish a more homemade, comforting feel, while a smoother, blended sauce brings all the flavors together more evenly.
I love that you took the time to experiment with both. That’s exactly the beauty of these kinds of dishes you can adjust little details depending on the moment or what you’re in the mood for.
Thanks again for sharing it! 🫶🏻1

Chef Kevin, this dish is a showstopper! The trottole are doing their magic — full of sauce, color and soul. That deep red and the glossy olives make the whole plate sing 🇮🇹🎶 @orsolya-csernak Orsi, you have to meet Kevin — Orsi has a Hungarian heart and an Italian obsession… you two are bound to connect! 😄
What’s the one Italian dish you could eat forever and never get tired of? And Kevin, what do you value most in a pasta dish: the sauce, the shape or the texture?
