Khao Soi as an inspiration from the lesson. Since I am from India the mustard greens were also homemade, we do not have store bought here. The paste was made traditionally as well.

Everything you mentioned adds real value to your dish. As a tip for next time, if you’d like, you could play a bit with natural lighting and background when taking the photo, to let each element shine even more. The foundation is already excellent!
