Hi Abu! It’s great to see your entry for the #BachourChallenge 🎉
That Bi-Color Croissant looks super eye-catching and vibrant there’s no way it could go unnoticed! The combination of red and golden tones really pops in the photo, and the bake looks quite even too.
You’re definitely on the right track with the color application! One small tip you might consider for future versions: refining the definition of the red lines could help you achieve an even cleaner, more polished finish.
To do that, make sure the colored dough is well chilled before cutting and applying it, and use a sharp cutter or ruler to get crisp edges. You can also lightly press with a rolling pin to help it stick better without deforming the shape.
I’m really curious ,what kind of coloring did you use to get that intense and beautiful red? Was it natural or a gel-based one?
Keep sharing your work — it’s a pleasure to see your enthusiasm for this challenge! 🙌🏻-

@Sussan Estela Olaya The color was a fractal gel concentated coloring.

Hey Abu! This Bi-Color Croissant looks fabulous! Your layering technique is impressive, with the vibrant red and golden hues echoing Bachour’s signature style. The laminated layers are well-defined, and the cocoa nibs add a nice texture. However, it seems that the shine on the red glaze could be boosted a bit more to match the glossy finish of the original. What’s the most satisfying part of working with colored doughs for you? ✨
We love seeing your wonderful work here! Have a grear day and congratulations on joining with 3 entries to this very first Challenge you participate in!-

@Sol Damiani Thanks for the encouragement. The most enjoyable part is usually final rolling to 3mm right before shaping. This is when it all comes together and the actual excitement starts regarding what will happen in the oven. Lamination is an amazing practice from beginning to end in general. I will post these items on my Instagram with tagging the Bachour challenge for sure.

@abughaben Oh, I love how you described that final rolling stage—like the suspense before the big reveal in the oven! You’re so right: lamination has this magical quality from start to finish.😊 Thanks for sharing, Chef!
