As for keeping the filling juicy, one of my favorite tips is to make sure the rice is slightly undercooked before adding it to the filling. This helps it absorb the meat juices while still staying tender. Also, adding a little bit of broth or tomato sauce to the bottom of the baking dish can create a bit of steam to keep everything moist during cooking. Finally, I like to cover the dish with foil while it bakes and remove it towards the end to let the peppers get that perfect roasted look.
