Who is Paloma Ortiz?

Born in Taxco, Guerrero (Mexico, 1985) with Oaxacan and Veracruz heritage, Paloma Ortiz was raised in Mexico City.
She holds a Bachelor's Degree in Gastronomy from the Instituto Culinario de México in Puebla, where she represented her country in international culinary competitions, including the IKA Culinary Olympics in Erfurt, Germany.
Driven by her passion for the origins, evolution, and cultural significance of Mexican cuisine, Paloma pursued a diploma in “Mexican Cuisine and Culinary Culture” at the National School of Anthropology and History (ENAH), and specialized in traditional Mexican cooking at ESGAMEX.
She served as Executive Chef at Yuban, a restaurant in Mexico City dedicated to Zapotec Oaxacan cuisine, where she led the launch of the restaurant and built a fair-trade supply network with local producers from the Oaxacan Sierra.
To complement her expertise in F&B management, Paloma earned a Master’s in Hotel and Restaurant Management. She now works as a culinary consultant on projects in both Mexico and Spain.
In 2015, she moved to Barcelona to become Head Chef at Oaxaca, a fine-dining restaurant, where she introduced diners to Mexico’s most traditional flavors.
Paloma has consulted on various F&B projects in Mexico and Spain, particularly in the opening and management of benchmark Mexican restaurants.
She currently collaborates with Paloma Gracia, a Mexican fonda located in Barcelona’s Gracia neighborhood.
