Who is Emma Schacke?

A chef who works passionately to learn as much about her field as possible and to keep old world traditions alive.

Emma Schacke began her professional culinary journey almost two decades ago, at the prestigious French Pastry Institute, Chicago, where she had the privilege of training under world-renowned French pastry chefs. This foundational experience sparked a passion and discipline that led to a diverse career in the pastry arts.

After over a decade of working in top pastry kitchens across America and Europe, she decided to shift her focus to the art of traditional sourdough bread-making, learning about the history of the craft and gaining knowledge from experienced bread bakers working with wood-fired ovens and freshly milled grains.

Now, Emma is the proud owner and operator of Evergreen Butcher and Baker in Atlanta, which has been a cherished community establishment for the past five years. Evergreen sells hundreds of whole grain sourdough loaves and pastries daily to a loyal and growing customer base, building community around the ritual of daily bread.
