Ooh la la! That pain au chocolat looks absolutely divine!
The layers are so perfectly defined, and that golden brown color is making my mouth water. 
What kind of chocolate did you use for the filling? I’m always curious about the different nuances chocolate can bring to this classic pastry. Have you ever tried it with a slightly sour chocolate? I wonder how that would play with the buttery sweetness.

@soldamiani I used two types of batujas from the Felchlin company. Both dark (sour
and with hazelnuts. Reduce the sugar, turn up the flavor!
