What kind of chocolate did you use for the filling? I’m always curious about the different nuances chocolate can bring to this classic pastry. Have you ever tried it with a slightly sour chocolate? I wonder how that would play with the buttery sweetness.

@soldamiani I used two types of batujas from the Felchlin company. Both dark (sour
and with hazelnuts. Reduce the sugar, turn up the flavor!
