I forgot to share the final dish! To us it’s known as chicken riggies but I thinK it’s another regional favorite. So think chicken tossed in a tomato cream sauce with a LOT of spicy peppers (plus some roasted red peppers to mellow it out)

That pasta looks delicious! The combination of chicken in a creamy tomato sauce with spicy peppers and grated cheese on top must taste amazing.
