Hey Chris, good lookin’ snacks! Did you do a cure or dry rub on the fish itself or is it a seasoned batter?

@Ryan Finney seasoned batter! Cajun spices turn the batter so dark. I use egg yolks in the batter. After mixing and let it rest in the fridge for at least an hour. Just before frying the fish, I beat the egg whites into stiff peaks and fold them into the batter. It really lightens up the batter.
