I was gifted 2kg of macadamia nuts, so today I decided to start using them. I baked Levain bakery style white chocolate and macadamia nut cookies. These were excellent! Buttery, crispy on the outside, gooey on the inside, with hints of vanilla, caramel and of course, the savoury notes from the roasted nuts. I roasted mine in the airfryer, it’s my favourite way to roast nuts now.
