    Hi @Jenn

    The best way to preserve raw croissants is to keep them already formed, before final fermentation.

    Store them in a container with an airtight lid and separated by plastic kitchen paper.

    Shelf life is up to 2 months when frozen.

    When you decide it’s time to eat them, defrost the croissants by placing them in the refrigerator and letting them thaw overnight or for 12 hours in the refrigerator, then let them proof according to the chef’s instructions and bake them.
