Welcome to the Scoolinary community, and thank you for your question!For a panettone with 530 g of dough, the ideal mold size is approximately 13-14 cm in diameter and 10-12 cm in height.
Panettone molds are usually categorized by dough weight capacity, with the recommended dimensions as follows:
500 g of dough → Mold: 13-14 cm diameter x 10-12 cm height
750 g of dough → Mold: 15-16 cm diameter x 11-12 cm height
1 kg of dough → Mold: 17-18 cm diameter x 12-13 cm height
If your mold is larger, the dough may spread more horizontally and not rise as much. If it’s smaller, it could overflow.
