I am a fan of Easter Island, and decided to have a look at what kind of local desserts exist from the area to make an elevated version of them. My entremet’s main ingredient is the po’e fruit pudding cake traditional at Easter island, combined with coconut mousse to have multiple, alternating layers. As for exteriors, the cake is purposefully designed to represent Easter Island as an isolated unit in the Pacifics, statues marking the main points on the top of the cake where you can find them originally. The chocolate statues intentionally have a quite rustic look to represent the erosion of the possibly over thousand year-old statues.
