Today I made an Istrian-style goulash with homemade pasta, a dish I first tried a few years ago when I was visiting a friend in Croatia. I remembered it the other day and couldn’t get it out of my head and I finally decided to make it myself. So yesterday I called him and asked him to send me the recipe.
It’s a simple, cozy kind of meal… a rustic base of onions, paprika, a bit of tomato, the patience of long simmering, and finally that deep, comforting sauce that hugs every piece of pasta.
I’m really happy with how it turned out.
