This one was born from the sea and the fire alike. The salmon melts into the creamy rice, leaving behind whispers of salt and tenderness, while a touch of crushed chili awakens the senses just enough to remind you that balance is never still… it’s alive.
Then comes the crisped salmon skin, light as a secret, resting atop the softness like memory over time. A drizzle of aceto draws thin trails of contrast, and fresh parsley brings the kind of brightness only nature knows how to compose.
Each bite feels like a quiet conversation between the sea and the land, between comfort and passion.

Hi Lana ☺ 🌱 This dish is poetic in both taste and visual expression. The creamy rice looks rich and perfectly emulsified, and that crisped salmon skin adds a wonderful texture contrast. The microgreens and aceto not only lift the dish visually, but create a refined, restaurant-level finish.
Have you thought about trying this same dish with a smoked fish or adding a citrus gel for contrast?

@soldamiani Thank you dear. I sometimes make it with smoked trout. And there is lemon juice in the aceto balsamic. ☺️ I could certainly play with the gel.
