Peanut Chicken Stir-Fry is my go-to for a quick and easy meal. The sauce is a simple mixture: ½ cup peanut butter, 1 tablespoon toasted sesame oil, 1½ tablespoons rice vinegar, 2 teaspoons brown sugar, 2 teaspoons grated fresh ginger, 2 garlic cloves (minced), 2 teaspoons soy sauce, 1 teaspoon fish sauce. Thin out with water, until it is a thick, creamy consistency.
Fry strips or cubes of seasoned chicken in a hot pan or wok until cooked – 3 to 5 minutes. Add vegetables of choice, I tend to use snowpeas. As soon as the vegetables are done to your liking (I like it still slightly crunchy), turn off the heat and add the sauce. Stir to coat everything with sauce. Serve with cooked rice.
