Chicken Enchiladas Verde & Mexican Rice – inside is pulled mojo chicken, four Mexican cheeses, and a roasted salsa verde with tomatillos, jalapeños, poblano, and onion – all roasted. On top is roasted poblano cream sauce, sour cream, and onion, parsley and lime juice relish.
For the roasted poblano cream sauce – pobalnos, olive oil, onion, garlic, sour cream, cilantro, salt. Roast poblanos, sauté garlic and onion, mince garlic. Combine in a blender. Warm in sauce pan.

The enchiladas look perfectly wrapped, and that roasted poblano cream sauce is so velvety and vibrant it could almost steal the show on its own. ☺️ Honestly, I wouldn’t call this “amateur” at all. It look like something straight off a restaurant menu.
