Zero waste batch cooking course, has produced a delicious pumpkin soup for our meal tonight. Probably one of the nicest pumpkin soups I’ve ever made. This one is a firm family favourite.

It looks amazing, Judy! What spices did you add to the pumpkin purée?

@Paul Miller nothing was added to the puree itself apart from a little salt and pepper and some parsley and garlic oil.
the pumpkin piece were roasted with some chilli flakes, a little garlic, some cinnamon and a good shake of Tuscan seasoning, i had to use this as i didn’t have any provencal herbs. I did add a touch of oregano too.

Judy, what a beautiful soup! It’s clear you jumped all in on the zero-waste batch cooking course and we love seeing how much you’re making the most of it!
The texture looks spot-on, creamy with those little swirls of oil showing all the love you put into it. And the prosciutto on top… genius! It adds contrast, height and color without overcomplicating things. Super thoughtful and totally comforting. Plus, you showed us the whole batch production—now we just want to pull up a long table and dig in with you!

@sussan_scoolinaryteam i think i will always have a jar of the garlic and parsley oil in my refrigerator. Its such a handy condiment. I use it on everything. I also love the onion and tomato sofrito. You can add it to almost everything.
